How beautiful spring is with its colors, fruits, and flowers, and a blueberry bundt cake fits right in.
So many good and healthy desserts can be made with seasonal fruits. And this bundt cake is one of them! Fresh, sweet, soft… a real delight for our palate.
Blueberries have a flavor and sweetness that captivates. They are rich in vitamin C, are excellent antioxidants, and are anti-inflammatory.
In almost every dish I make, whether sweet or savory, fruit or vegetables are always present, fundamental ingredients for a healthy and balanced diet.
This delicious bundt cake is without butter and with stevia and honey, but if you don’t have them at home, you can still use whole cane sugar or regular sugar, although I always advise against it.
I also recommend the strawberry plum cake, the chocolate plum cake, the apple tart made with almost a kg of apples and very little flour, and the blueberry jam tart.

Ingredients for making the blueberry bundt cake
- 3 eggs
- 2 1/2 cups all-purpose flour or whole wheat flour
- 5 1/2 tbsp vegetable oil
- 2/3 cup plain natural yogurt
- 1/3 cup brown sugar
- 1 tsp honey
- 1 packet baking powder
- 12 oz blueberries

Steps for preparing the bundt cake
To prepare the blueberry bundt cake, we start by thoroughly washing the blueberries. Then set them aside.
Next, take a bowl and add the eggs, honey, and brown sugar. Then, with the electric whisk, beat for a few minutes until you get a nice frothy mixture as in the picture. After that, add the plain yogurt while continuing to whisk with the mixer. It is essential to add the ingredients little by little.
Subsequently, add the vegetable oil in a thin stream, then the flour, and finally the baking powder, always adding little by little and mixing with the electric whisk.
After adding all the ingredients and obtaining a homogeneous mixture, finally add the blueberries. Then, with a spatula, mix from top to bottom and mix everything well. Finally, oil and flour the bundt pan well and finish by pouring the batter in, but make sure it is well leveled. Finish with baking for about 30 minutes in a static oven at 350°F.
Once baking is complete, let it cool and finally enjoy it!
Tips and Notes
