Blueberry Omelette in a Skillet WITHOUT OVEN

The blueberry omelette is a sweet omelette, despite the name suggesting something savory.

It’s prepared in a few minutes, without turning on the oven, and it’s truly irresistible! You make it quickly and it always impresses.

It’s a blueberry dessert reminiscent of the humble cuisine of the past, where a few ingredients were transformed into surprising and fulfilling dishes.

Ideal to serve as breakfast or snack or as a dessert at the end of a meal. It can be served accompanied by a scoop of vanilla ice cream or whipped cream.

Blueberries are among the fruits with the highest concentrations of antioxidants and are rich in numerous beneficial properties.

Ingredients for the blueberry omelette

  • 10.6 oz blueberries
  • 2 eggs
  • 1/2 cup plain natural yogurt
  • 1/2 cup type 1 flour
  • 2 tbsp sugar
  • as needed butter
  • 1 teaspoon baking powder

Steps for preparing the blueberry omelette

To prepare the delicious blueberry omelette, start by thoroughly washing the blueberries and patting them dry with some paper towels.

  • Meanwhile, in a bowl, break the eggs and add the sugar. Using a whisk, beat them vigorously until you obtain a frothy and homogeneous mixture.

  • Add, while continuing to mix, the sifted flour and yogurt. Heat a nonstick pan Ø 24 slightly greased with butter and pour in the blueberries first, then the batter. Cook for 6-8 minutes over low heat with a lid until the surface solidifies. Flip it over and cook for another 5 minutes, still over low heat with a lid.

    After cooking, gently place it on a serving plate and allow it to cool completely.

    Dust with powdered sugar and serve … enjoy!

Storage and Tips

Store the cooled blueberry omelette in an airtight container or well-wrapped in cling film in the fridge for two days.

You can freeze it. Cut it into portions and wrap each with cling film or use freezer containers. Thaw in the fridge, not at room temperature. It lasts up to 2 months.
