Broccoli and Potato Casserole with Creamy Center

The broccoli and potato casserole with a creamy center is an easy, very tasty recipe rich in vegetables as in most of my recipes.

It’s a great way to consume vegetables, with which you can create thousands of appetizing recipes like this one.

Based on boiled potatoes and broccoli that are then mashed and filled with good creamy and stringy cheese.

Great as a main course, served hot, it warms the palate and makes taste buds happy in winter.

Ingredients for the preparation of the broccoli and potato casserole

  • 1 lbs broccoli
  • 1.3 lbs potatoes
  • 6.3 oz provola slices
  • 2.1 oz grated parmesan
  • 1 egg
  • 1.8 oz brie
  • to taste fine salt
  • to taste extra virgin olive oil

Steps for the preparation of broccoli and potato casserole

To prepare the delicious broccoli and potato casserole with a creamy center, we start by cleaning the broccoli and potatoes, then cutting them into pieces and boiling them in a pot with plenty of water.

  • Once cooked, drain them using a colander and mash them with a potato masher and place them in a bowl,

  • Then we add the egg, the grated parmesan, the salt and a drizzle of extra virgin olive oil and mix everything with a fork. Then line a springform pan of 20 cm with some parchment paper and pour in half of our mixture, leveling it carefully.

  • Cover it with provola slices or other cheese of choice

  • Cover with the remaining mixture and add the brie in pieces and a sprinkle of grated parmesan. Bake everything at 356°F for about 30 minutes and our casserole with creamy and stringy center is ready to be served… enjoy your meal!

Storage and Notes

The broccoli and potato casserole can be stored in the fridge for two days. Before consuming, I recommend heating it in the oven at 320°F for 10 minutes.
