Cauliflower flatbread is a simple but truly appetizing recipe. It always surprises everyone, even those who aren’t particularly fond of this vegetable. With a crispy crust and a soft center, it’s irresistible!

Preparing cauliflower flatbread means bringing to the table a clever and tasty idea to consume vegetables without giving up the satisfaction of a flavorful dish.

It’s made with a batter of water, flour, and Parmesan.

The main ingredient is cauliflower, a vegetable low in calories but rich in fiber, vitamin C, vitamin K, and minerals.

This flatbread represents an excellent compromise between taste and simplicity: a homemade recipe, versatile and suitable for those who want to eat more consciously, without giving up conviviality and the pleasure of cooking.

Great to serve as an appetizer or main course.

Ingredients for the cauliflower flatbread

  • 1.32 lbs cauliflower
  • 1.41 oz grated Parmesan cheese
  • 1.2 cups type 1 flour
  • 1.09 cups sparkling water
  • to taste fine salt
  • 3 tablespoons extra virgin olive oil

  • 1 Hand whisk

Steps for cauliflower flatbread

To prepare the delicious cauliflower flatbread, wash the cauliflower thoroughly under running water. Cut it into florets.

Bring a a pot with a steamer basket and cook for about ten minutes, until it becomes soft but not mushy.

Once cooked, let it cool completely

  • Prepare the batter with water, flour, and salt. Mix well with a hand whisk until you obtain a homogeneous mixture. Add the cauliflower florets and the Parmesan

  • Take a 20×30 baking dish and line it with parchment paper. Pour the mixture and level it with a spatula.
    Drizzle with extra virgin olive oil and bake in a static oven at 392°F for about 25 minutes or until golden brown, and in air fryer mode at 392°F for about 15 minutes, until golden brown

  • Once cooked, let it rest for a few minutes, cut into slices, and serve hot. Enjoy your meal from Barbara!

Storage

Cauliflower flatbread can be stored at room temperature for a few hours, then in the fridge in an airtight container or wrapped in cling film.

It keeps well in the refrigerator for 2–3 days

To bring it back to the right crispness, heat it:
in the oven at 356°F for 5–8 minutes or in an air fryer for 3 minutes at 338°F

It is possible to freeze it already cooked, preferably cut into portions. Wrap it well in cling film and then in a freezer bag.
It stays in the freezer for up to 1 month.

Thaw in the fridge.
