Ingredients for Preparing the Potato Casserole

  • 21 oz potatoes
  • 2 oz stringy cheese
  • 3 eggs
  • to taste dried oregano
  • 1/2 onion
  • to taste extra virgin olive oil
  • to taste fine salt
  • 1/4 cup white wine

Steps for Preparing the Potato Casserole

Start by peeling the potatoes with a potato peeler, then dice them on a cutting board and chop half an onion. Meanwhile, fill a 9.5-inch pot with plenty of water and bring to a boil.

Add salt and the potatoes, and cook for about ten minutes on low heat until they are al dente.

Grease a casserole with a drizzle of extra virgin olive oil and sauté the chopped onion.

Add the drained potatoes and cook for another 15 minutes on low heat, gently stirring occasionally. Halfway through cooking, add a quarter cup of white wine and cook with the lid on.

Once done, lay the whole eggs, julienned stringy cheese, and a sprinkle of oregano on top. Cover and cook on low heat until the eggs are just right, with creamy yolks and the cheese melted and stringy.

Storage
