  • 10.5 oz chard
  • 3 tbsp flour
  • to taste fine salt
  • 1.4 oz grated Parmesan cheese
  • to taste extra virgin olive oil

Steps for Preparing the Chard Omelette

Begin by thoroughly washing the chard. Remove the stems and cut the leaves into pieces. Place them in a large bowl with plenty of water and baking soda and let soak for a few minutes. Then rinse well and drain with a colander.

Grease a non-stick pan with a drizzle of extra virgin olive oil and cook the chard, stirring occasionally, with a lid over medium heat. During cooking, the chard will release water that, at the end of cooking, you will need to drain.

Once cooked, let them cool completely. Then place them in a bowl, without squeezing, and add three tablespoons of flour, the grated Parmesan cheese, and salt.

  • Mix well and blend the ingredients. Meanwhile, grease the non-stick pan again (9.5 inches) with a drizzle of oil and bring to temperature. Then pour in the mixture and level it. Cook with a lid for 5 minutes over low heat or until lightly browned. Then turn it to the other side and cook for another 5 minutes WITHOUT THE LID over low heat.

  • For the last two minutes, add shredded mozzarella or any other type of melting cheese, and cook with the lid on. The cheese will melt and become beautifully stringy.

Tips and Storage

Buy fresh chard with green and crispy leaves, avoiding wilted or yellowed ones.

Keep the stems as they are rich in fiber and can be sautéed or used in soups.

The egg-free chard omelette can be stored in the fridge for two days.

Before serving, heat it in a pan with a lid to restore the initial texture.
