Cheesy Potato and Pumpkin Casserole

The cheesy potato and pumpkin casserole is a recipe that warms the palate and is irresistible.

Very tasty, cheesy, and rich, it is made with potatoes, pumpkin, melting cheese, and béchamel sauce.

With the beginning of autumn, pumpkin becomes the main player on the tables, and there are many recipes that can be prepared.

Pumpkin is rich in antioxidants and is suitable for following a weight-loss diet, promoting skin and eye health.

Meanwhile, the potato is rich in potassium, antioxidants, and minerals.

In this recipe, I used Mantuan pumpkin. For a good result, I recommend choosing it ripe.

Ingredients for the preparation of cheesy potato and pumpkin casserole

  • 4 medium potatoes
  • 600 g Mantuan pumpkin
  • 1 l béchamel sauce
  • 250 g provolone cheese
  • 2 tablespoons extra virgin olive oil
  • 4 tablespoons grated Parmesan cheese
  • to taste salt

Steps for preparing the cheesy potato and pumpkin casserole

To prepare the cheesy potato and pumpkin casserole, start by peeling the potatoes and pumpkin. Then remove the skin and cut the vegetables into medium slices.

  • Then on a cutting board with the help of a kitchen knife, cut the provolone into pieces. Next, place in a baking dish the vegetables with salt and extra virgin olive oil and mix well.

  • Meanwhile, prepare the béchamel sauce and once ready and hot, add the chopped provolone and mix.

  • Then pour the creamy mixture over the vegetables

  • and mix well. Finally, sprinkle the surface with grated Parmesan cheese and bake at 356°F (180°C) for about 45 minutes, until golden brown.

  • Once cooked, the casserole will appear beautifully browned, creamy and cheesy, ready to be served hot.

Storage and Notes

The cheesy potato and pumpkin casserole can be stored for two days in the refrigerator. Before serving, I recommend passing it in the oven at 320°F (160°C) for 6-8 minutes.
