Cherry clafoutis is a dessert of French origin, fresh, delicious, full of fruit, with a pudding-like consistency, and quick to prepare. I love it very much and prepare it often, varying with the fruit.
Ideal at any time of the day, starting right from breakfast as it is hearty and nutritious.
Cherries are rich in fructose and sorbitol and are recommended for those following a weight loss diet and, if consumed in moderation, even for diabetics. They have a purifying effect, are rich in antioxidants, and cherry juice is useful against insomnia in the elderly.
Since I was a child, I always liked climbing cherry trees to pick and enjoy the cherries directly from there. Unfortunately, last year, due to the intense heat, out of three trees I owned, I was left with only one, so the harvest this year was meager.

Ingredients for the preparation of strawberry clafoutis
- 2 cups cherries
- 3 eggs
- 3/4 cup milk
- 3/4 cup type 1 flour
- 6 tbsps erythritol or 5 tbsps sugar
- to taste vegetable oil

Steps
To prepare the fresh and delicious cherry clafoutis, start by cleaning the fruit.
Then in a bowl place the eggs and erythritol or, if you don’t have it, granulated sugar, and with a hand whisk mix well but do not beat the eggs. Please be careful, or we’ll have issues while baking. Then, add the milk slowly while continuing to stir.
And then the flour. We will get a homogeneous and slightly foamy mixture. Then, take a tart pan of 10.2 in diameter, lightly oil it with vegetable oil and add our mixture. Finally, place the cherries over the entire surface.
And finish by baking at 338 degrees Fahrenheit for about 30-40 minutes. As always, I recommend doing the toothpick test. Once the cooking time is over, take it out of the oven, let it cool, and finally serve… enjoy your meal!!
Storage and notes
Cherry clafoutis can be stored in the fridge for two or three days. It is excellent consumed cold and with a sprinkle of powdered sugar.
