Ingredients
- 1.1 lbs boiled potatoes
- 7 oz mozzarella
- 7 oz provola
- 4 oz cooked ham
- 2 eggs
- 2 oz grated Parmesan cheese
- 1 oz breadcrumbs
- to taste extra virgin olive oil
- to taste fine salt
- 1 round puff pastry
- 1 sprig parsley

Steps for preparing the clever potato pie
To prepare the delicious potato pie, start by boiling the potatoes and dicing the provola and mozzarella.
Once cooked, mash them with the potato masher in a bowl and let them cool. Then add the eggs, chopped parsley, grated Parmesan cheese, and breadcrumbs, and mix well, then add half of the cheese previously diced, the cooked ham, and salt, and mix well with a fork.
Then line a tart pan of d. 24 cm with parchment paper, and spread the puff pastry, leaving the edges overhanging. Then pour in our mixture, leveling it with a fork, and cover it with the remaining mozzarella and provola. Turn the edges of the pastry inward with the fork, pressing lightly so they don’t rise during baking. Drizzle with a little extra virgin olive oil and bake at 356°F for about 30 minutes in a static oven.
Once baked, let it rest for a few minutes and serve hot … Enjoy your meal!
Tips and Notes
The clever potato pie can be kept in the fridge for two days. Reheat in the oven at 320°F for a few minutes before serving.
