Coffee and White Chocolate Cookies

Coffee and white chocolate cookies are delicately sweet cookies that captivate you from the first bite. The combination of coffee and white chocolate is something special and unique, and their sweet flavor lingers on your taste buds, sweetening your day.

Like all my sweets, they are made without butter and with whole cane sugar, except for the sugar used to coat them.

Ideal for dipping for a great breakfast or to enjoy as a snack served with a good juice. Crispy and light. My kids also take them to school as a snack.

Starting the day off on the right foot is essential, especially if you start it healthily.

Ingredients for preparing coffee and white chocolate cookies

  • 1 1/2 cups type 1 flour
  • 1/4 cup whole cane sugar
  • 1/4 cup Greek yogurt
  • 1 egg
  • 2 tbsps seed oil
  • 1 cup coffee
  • 1 tsp baking powder
  • 1/3 cup white chocolate
  • to taste granulated sugar

  • Parchment paper
  • 1 Wooden spoon
  • 1 Coffee machine

Steps

To prepare the delicious coffee and white chocolate cookies, start by getting a bowl.

  • First, incorporate the egg, then the whole cane sugar, then the seed oil, then the Greek yogurt, and a small cup of coffee prepared with the convenient Bialetti coffee machine and whisk the ingredients well. Next, add the flour, baking powder, and white chocolate cut into flakes and mix roughly with a wooden spoon before kneading by hand.

  • Knead for a few minutes until you obtain a compact dough.

  • Then, with your hands, create oval-shaped cookies weighing 1 1/2 oz each and coat them one by one in granulated sugar.

  • Next, place them on a baking tray lined with parchment paper, flatten them slightly, and finish by baking them at 356°F for 20 minutes. In an air fryer, bake at 320°F for about 12 minutes. Check in the last few minutes as each fryer cooks at different times.

    Once baking is completed, take them out of the oven, let them cool, and finally, you can enjoy them… enjoy your tasting!
