Creamy Apple Cake Recipe

in

The creamy apple cake recipe is a wholesome, rustic dessert that brings out the flavor of the apples.

And if an apple a day keeps the doctor away, with this one our doctor can take a vacation!

A dessert where the absolute stars are the apples, which are almost drowning in a very small amount of batter.

This creates a unique and light texture: the apples cook slowly until soft and juicy, while the batter forms only a light binder between the fruit slices.

Practically a millefeuille but made of fruit.

Use Golden or Reinette apples—varieties that tend to hold their shape during baking and offer a perfect balance of sweetness and acidity. A touch of cinnamon enriches everything with warm, spicy notes, further enhancing the apple flavor.

During baking, the cake releases a comforting aroma reminiscent of traditional kitchens and old-fashioned desserts.

It has a rustic, inviting appearance. The apple slices arranged in layers are clearly visible and the golden surface shows a slight caramelization because it is dusted with sugar before baking.

It’s perfect served either warm or cold. You can accompany it with a scoop of vanilla ice cream or a spoonful of whipped cream to add a touch of creaminess. It’s also ideal for a light breakfast or an afternoon snack, paired with a cup of tea or coffee. Its lightness makes it suitable to enjoy at any time of the day.

Start by peeling the apples with a peeler or a knife. Cut them in half, remove the core and slice them thinly using a mandoline, creating slices about 2–3 mm thick (about 1/16–1/8 in). This thickness allows the apples to soften nicely during baking.

Soak a little raisins in water; they will be used to decorate the edges at the end.

In a large mixing bowl, beat the eggs with the sugar using an electric hand mixer until the mixture is pale and fluffy.

Slowly add the oil and milk in a thin stream while continuing to mix, then add the sifted flour and baking powder, the cinnamon and finally the apples.

Mix everything well with a silicone spatula and pour into a 22 cm (about 8.7 in) springform pan lined with parchment paper. Level the surface and decorate the edges with the dried fruit, raisins and almonds.

Bake at 356°F (180°C) for about 35–40 minutes. Before removing, do the toothpick test.

When baked, take it out of the oven and serve warm or at room temperature and …

Storage and tips for the creamy apple cake recipe

Use organic apples if possible.

You can keep the all-apple cake at room temperature for two days covered with plastic wrap or in an airtight container.

If you want to store it for more days, place it in the refrigerator, always covered with plastic wrap or in a container. The cake will become slightly firmer in the fridge but will retain its flavor and moisture.

Before eating, I recommend bringing it back to room temperature or warming it slightly in the oven for a few minutes. This will help recover its softness and the intensity of the flavors.
