Steps for creamy pasta and beans
Recipe for pasta and beans.
If you use dried beans, soak them overnight in plenty of water.
For the canned pasta and beans recipe, you don’t need this step since they are already pre-cooked.
Peel the onion and carrot, remove the strings from the celery, and wash them under running water.
Chop them with a chopper
In a pot, pour the extra virgin olive oil and the chopped vegetables
and sauté for two to three minutes, stirring occasionally
Add the beans and let them flavor for two minutes
the tomato sauce
and the water and potatoes and cook for about twenty minutes. With the potatoes, it’s grandma’s pasta and beans recipe, the best in my opinion.
Remove the potatoes and one-third of the amount of beans and place them in the bowl of a blender and blend them until smooth. Pour it into the sauce
and mix.
Add the pasta and cook to al dente. Turn off the classic pasta and beans recipe and let it rest for 5 minutes. If you like it more liquid, add a little more water.
A quick pasta and beans to serve hot.
Storage
Creamy pasta and beans can be stored for 2-3 days at most. Transfer the pasta and beans to an airtight container only after it has completely cooled.
Tip: if you plan to store it, cook the pasta very al dente, as it will absorb more liquid during resting and may become overcooked.
You can store only the beans with the sauce and add the pasta when reheating, so the texture remains perfect.
You can freeze : let it cool completely and place it in single-serving containers or freezer bags.
Then thaw it in the fridge for 8 hours or reheat on low heat, adding some water or broth.
