Gratinated radicchio is a simple but really flavorful recipe that can win over even those who don’t particularly like this vegetable.
I prepare my Treviso red radicchio in the air fryer by starting with a quick sauté in a drizzle of extra virgin olive oil, where it softens slightly and releases its intense aroma; then I enrich it with crunchy breadcrumbs, Parmesan, sliced olives and a fresh sprinkle of parsley, creating a perfect balance between a slightly bitter note and savoriness, and finish it with a short gratin in the air fryer.
The red radicchio in the air fryer becomes golden and crisp on the outside and tender inside, with a light but irresistible gratin, without the need for excess fat.
I love this air-fried radicchio because it is quick, practical and lighter than the traditional oven version: hot air cooking preserves taste and texture while reducing added fats, while the radicchio provides fiber helpful for digestion, valuable antioxidants to fight free radicals and vitamins like K and C, making this side dish not only delicious but also a little ally for daily wellbeing.

Ingredients for gratinated radicchio in the air fryer
- 2 heads Treviso red radicchio IGP, late variety
- 1 clove garlic
- 2 tbsp extra virgin olive oil
- to taste fine salt
- 2 tbsp grated Parmesan
- 2 tbsp breadcrumbs
- 1 tbsp chopped parsley
- 10 pitted green olives, sliced

Steps for gratinated radicchio in the air fryer
To prepare the delicious radicchio in the air fryer, cut it in half, remove any damaged outer leaves, and wash it thoroughly under running water.
Brush a nonstick 10.25 in pan with a drizzle of oil and sauté one garlic clove. Once golden, remove it and add the radicchio, cooking over medium-low heat for about 5 minutes with a lid.
Turn it to the other side and cook for a few more minutes until it becomes tender. If it dries out too much, add a splash of water and season with salt.
When cooked, place it in a lightly oiled air fryer pan facing up.
Meanwhile, in a bowl, mix the breadcrumbs with the Parmesan, chopped parsley and a pinch of fine salt.
Stuff the center of the radicchio with the mixture and add the pitted olives sliced into rings. Season with a light spray of EVOO using an oil sprayer and place in the air fryer for about 8 minutes at 356°F or until golden brown.

Storage for gratinated radicchio in the air fryer
Let it cool completely to room temperature.
Store it in an airtight container or cover with cling film.
It keeps for 2 days in the refrigerator.
Keep in mind that the gratin topping will tend to soften slightly due to moisture.
To restore crispness to already-cooked Treviso radicchio in the air fryer:
338–356°F for 3–5 minutes.
Avoid the microwave, as it would make the red radicchio from the air fryer soggy and watery.
I do not recommend freezing. Radicchio is high in water; after thawing it would lose texture and the breadcrumb topping would become wet.
