To prepare the delicious crispy zucchini, start by washing the zucchini under running water to remove impurities. Then cut off the ends and slice the zucchini in half and finally into sticks as shown in the video.
Place them in a bowl and season with extra virgin olive oil, breadcrumbs, Parmesan, fine salt, and herbs. Mix well with your hands or with two spoons, ensuring the zucchini are coated on all sides
Place the breaded zucchini in the basket of the air fryer in a single layer, being careful not to overlap them, otherwise, they may not cook evenly.
Cook the zucchini for about 18 minutes at 392°F in the air fryer, turning them halfway through to ensure they are golden and crispy on all sides. The exact cooking time depends on the size of the zucchini and the type of air fryer, so check in the last few minutes. You can also cook them in a traditional oven at 392°F for about 20-25 minutes, turning them halfway through.
At the end of cooking, you can turn on the grill for 2-3 minutes to make them more golden and crispy.Once the zucchini are golden and crispy, remove the basket and let them cool for a couple of minutes.
