Fennel cutlets are a tasty and intriguing way to enjoy fennel.
They are usually appreciated for their raw freshness, served in salads.
Breaded fennel is a delicious and light version as they are neither fried nor greasy.
They are breaded first in egg and then in breadcrumbs. The oven-baked fennel or air-fried fennel, achieve a golden and crispy breading with less fat compared to traditional frying.
The result is a fennel with a crispy crust and a soft, juicy center.
It’s a quick and easy side dish to prepare and is also liked by the little ones. Ideal for the whole family.
Fennel is light, purifying, and digestive: rich in fiber, water, and antioxidants, it helps against bloating and retention, promoting hydration and overall well-being.
A vegetable that is never missing at my home. I love cooking them in a thousand ways like parmesan fennel, fennel roll, gratinated fennel in a pan, crispy fennel with a puff pastry effect, roasted fennel, and fennel with orange

- 3 1/2 oz breadcrumbs

- 1 spray extra virgin olive oil

Steps for Fennel Cutlets
To prepare the fennel cutlets recipe, remove the ends of the fennel and the hard outer leaves, then cut them into slices, with a mandoline, about 1/4 inch thick.
In a flat plate, pour the breadcrumbs and in a deep one the egg. Salt the egg and beat with a fork. You can add a bit of pepper if desired.
Bread the fennel slices first in the beaten egg
and then in the breadcrumbs
on both sides.
Place them on a baking tray lined with parchment paper or in the basket of the air fryer
Drizzle them with a spray of extra virgin olive oil using an oil sprayer and bake in a static oven at 375°F for about 25 minutes, or in a ventilated oven at 350°F for the same time
Cook the breaded fennel in the air fryer for 20-25 minutes at 350°F, until golden, turning them halfway through cooking
Storage
The fennel cutlets can be stored for 1-2 days in an airtight container, once completely cooled.
To keep them crispy, reheat them in the oven or air fryer at 350°F for 5-8 minutes
You can freeze them raw, already breaded: place them on a tray with parchment paper and harden them in the freezer for 1 hour, then transfer them to a food bag.
They last up to 1 month.
Cook them directly from frozen, adding 5-10 minutes to the cooking times (oven or air fryer).
