  • 2 fennel
  • 1/2 cup grated parmesan cheese
  • 1/2 cup breadcrumbs
  • to taste fine salt
  • to taste extra virgin olive oil

Steps for Preparing Crispy Fennel Gratin

To prepare the delicious crispy fennel gratin, SEE THE VIDEO RECIPE

Start by washing the fennel under running water and removing the outer leaves.

On a cutting board slice, with a knife, the fennel first in half and then into slices not too thick, about 1/4 inch.

Line a baking tray or an air fryer baking tray with parchment paper completely covered with grated parmesan cheese, this will act as a binder between them

Place the fennel slices on top, side by side

Season the fennel with a spray of extra virgin olive oil using an oil sprayer, and sprinkle with the remaining parmesan and breadcrumbs.

Bake in a traditional oven at 392°F for about 20 minutes, turning on the grill and placing the tray on the top rack for the last 5 minutes, or to have gratin fennel in an air fryer at 392°F for about 10 minutes, until golden.

Storage and Tips

The crispy fennel gratins can be stored in the fridge for two to three days in an airtight container.

Before consuming, I recommend heating them in the oven at 302°F for 10 minutes to restore some of the crunchiness or in the air fryer for 3 minutes at 392°F
