- 2.2 lbs potatoes
- 8 slices provola cheese
- 2 tablespoons grated parmesan
- 5.3 oz cooked ham
- to taste extra virgin olive oil
- to taste fine salt
- to taste julienned mozzarella

Steps for preparing crispy potato parmesan

Start by peeling the potatoes with the peeler .
Then use a mandoline to slice them into not too thin slices, about half a centimeter.
Cook the potato slices in a steam pot or in a pot full of water and cook halfway through.
Drain them and let them cool.
Grease an baking dish. I used an 8×12-inch dish. Use extra virgin olive oil and make a first layer of potatoes, overlapping them slightly, and season with salt.
Fill with 4 slices of provola cheese and cooked ham, and create another identical layer.
Finish with a layer of potatoes, season them with extra virgin olive oil, salt, parmesan, a handful of julienned mozzarella, and rosemary.
Bake at 392°F for about 15-20 minutes, or until golden brown. You can also cook it in an air fryer, in a smaller pan, and by reducing the ingredients to 392°F for 15 minutes.
