  • 1 puff pastry sheet
  • 6 medium potatoes
  • 3.5 oz speck
  • 4.2 oz cheese
  • to taste fine salt
  • to taste extra virgin olive oil
  • 1 teaspoon rosemary
  • 6 tbsp grated Parmesan

To prepare the delicious crispy puff pastry flatbread with potatoes, watch the video recipe

Start by peeling the potatoes with a peeler. Grate them with a grater into a bowl. Season with salt and add the chopped rosemary and grated Parmesan. Mix everything well to combine the ingredients. Place the rectangular puff pastry on an baking sheet approximately 8 x 12 inches lined with parchment paper. Cover it, leaving about 3/8 inch (1 cm) of border, with slices of speck and slices of cheese — I used Galbanino but you can also use scamorza — until the entire surface is covered.

Pour the potato mixture on top and level well with a kitchen spatula. Drizzle with a little oil and bake at 392°F for 25–30 minutes, until the potatoes are golden. In air-fryer mode, cook at 356°F for about 20 minutes.

You can store the crispy puff pastry flatbread with speck, cut into slices, in an airtight container in the fridge for up to two to three days. Reheat before serving.
