Eggplant Cutlets

How delicious are eggplant cutlets, you really need to try them to understand.

Eggplants are a seasonal vegetable that I particularly love because you can make so many good and tasty recipes with them.

They have a delicate flavor and are therefore very versatile, usually pleasing everyone. This recipe is easy to prepare and naturally not fried, but baked.

Ingredients

  • 1 oval black eggplant
  • 3 slices cooked ham
  • 5 slices smoked scamorza cheese
  • 3/4 cups bread crumbs
  • 1/2 cup extra virgin olive oil
  • to taste salt

  • 1 Baking Pan
  • Parchment Paper
  • 1 Mandoline

Steps for Preparing Eggplant Cutlets

To prepare the delicious and appetizing eggplant cutlets, we start by cleaning the eggplant, leaving the peel on.

  • Then with a mandoline slice it into not too thin slices, see photo.

    Then on a flat plate, place the bread crumbs and in a deep plate, the extra virgin olive oil. Then, bread each eggplant slice quickly in the previously salted oil, letting the excess oil drain off as they should not absorb much; they just need to be moistened.

  • Then bread well in the bread crumbs. Meanwhile, line the baking pan with the parchment paper and place the breaded eggplant slices, and bake at 356°F for about 18-20 minutes in a static oven, while in an air fryer at 338°F for 10-12 minutes

  • After the first baking, take them out and fill 5 portions first with a folded slice of smoked scamorza cheese, and then with half a slice of cooked ham, also folded in two.

  • Then cover with the remaining 5 portions of eggplant, just like a toast, and bake for another 5 minutes in a static oven at 356°F or in an air fryer for 2 minutes at 338°F until the cheese melts.

  • Finally, take them out of the oven and serve hot. See how they stretch… they are delicious! Enjoy your meal!

Tips and Notes

Eggplant cutlets are excellent even the next day if stored in the fridge and heated before serving.
