This is certainly one of my favorite dinner savers, and also for my family.
The focaccia with pane carasau is made without dough and without rising, it’s a ‘smart’ recipe that comes from the combination of traditional Sardinian carasau bread softened in water, stuffed with melted cheese and ham and baked for a few minutes in the oven.
Ideal to serve as a complete meal, snack, or appetizer.

Recipe with pane carasau
- 6 sheets pane carasau
- 3.5 oz cooked ham
- 5.3 oz brie
- as needed extra virgin olive oil
- as needed water

Steps for the fake stuffed focaccia
To prepare the delicious fake stuffed focaccia WATCH THE VIDEO RECIPE
Take a round baking pan d.30 grease with a drizzle of extra virgin olive oil
Fill a large bowl with water and moisten the sheets of pane carasau.
Arrange them on the baking pan to cover the entire surface.
Stuff with slices of cooked ham and brie and cover with the remaining moistened sheets of pane carasau.
Season with extra virgin olive oil and bake at 392°F (200°C) for about 10-12 minutes or until golden.
Once baked, serve hot to enjoy all the crunchiness.
Cook the fake stuffed focaccia in an air fryer at 356°F (180°C) for about 8-10 minutes.
Storage
In the refrigerator:
Let it cool completely, then store it in an airtight container or wrapped in plastic wrap. It keeps in the fridge for 1-2 days.
The pane carasau will tend to soften, you can restore its crunchiness by briefly reheating it.
To reheat:
Heat it in air fryer at 356°F for 3-4 minutes or in static oven at 392°F for 5-7 minutes. This way it will become golden again and the cheese will melt without drying out.
Do not freeze as pane carasau tends to lose crunchiness
