Ingredients for Preparing the Fennel Roll

  • 2 fennels
  • 2/3 cup grated parmesan
  • 1/2 cup breadcrumbs
  • to taste fine salt
  • to taste extra virgin olive oil
  • 4 oz smoked salmon
  • 1/2 lemon

Steps for Preparing the Fennel Roll

To prepare the delicious fennel roll WATCH THE VIDEO RECIPE

Wash the fennels under running water and cut them first in half and then into slices about a quarter of an inch thick on a cutting board with the help of a knife.

Line a rectangular baking tray with parchment paper and cover it entirely with grated parmesan, it will act as an adhesive during cooking, and place the fennel slices on top, positioning them next to each other. They should touch and cover the entire tray.

Drizzle with extra virgin olive oil using an oil sprayer, a sprinkle of breadcrumbs, and the remaining grated parmesan.

Bake at 392°F for about 20 minutes in a static oven, until golden.

Remove from oven and let cool completely.

You’ll notice that the parmesan base has acted as an adhesive and a crispy crust creating a fennel pancake

Then fill with cream cheese, I used Philadelphia, and the salmon slices until covering the entire surface, leaving the edges out, and roll it up with the help of the parchment paper until a roll is formed.

Drizzle with lemon juice

Let rest for 5 minutes to allow the flavors to blend together and then cut it into 4 parts
