The first time I tried them, I cut them too thick and ended up with pumpkin cutlets instead of chips, but on the second try, they came out perfect and crispy, and they are really quick to prepare in the air fryer!

  • 1.1 lbs pumpkin
  • 3 tablespoons extra virgin olive oil
  • to taste fine salt

Steps to prepare flourless pumpkin chips

Choose a ripe and firm pumpkin.

I used the warzen orange, but you can use the mantovana, delica, violin, or butternut

  • Start by washing the pumpkin under running water. Cut it into 4 on a cutting board, remove the seeds and filaments, and slice it thinly with a mandoline.

    For oven cooking, arrange the pumpkin slices in a single layer on a baking tray lined with parchment paper and season with salt, dried rosemary or chopped fresh, and a spray of extra virgin olive oil with the oil sprayer.

    Bake at 392°F for 20-25 minutes until golden brown. The time varies based on the thickness of the slices; the thicker they are, the more time they need and vice versa. Therefore, monitor cooking after 10 minutes.

  • Place the slices in a single layer in the air fryer basket, season with fine salt, extra virgin olive oil, and dried or freshly chopped rosemary.

    Cook at 392°F for about 10 minutes. Here too, monitor the cooking as the thicker they are, the more time they will take to cook and vice versa.

    Once cooking is finished, place the chips on a rack to cool: they will harden slightly and become crispier as they cool.

Storage

Store in an airtight container at room temperature for 24 hours. If they become soft, you can reheat them for 3–5 minutes in the air fryer or 5–8 minutes in a hot oven at 212–248°F
