One of my favorite methods is definitely freezing. It is a quick, easy, and very convenient method.
Preserving tomatoes by freezing is a simple and advantageous technique that allows you to preserve their summer flavor even in the colder months. This practice allows you always to have a versatile ingredient available for numerous culinary preparations.
This year, my garden has gifted me with them in industrial quantities, and my freezer is happily full. For me, it’s a satisfaction to cook in winter with my vegetables nurtured with love and passion and especially without chemical products.

Steps for How to Store Cherry Tomatoes
To freeze cherry tomatoes, whether they are plum, cherry, Pachino, etc., choose fresh and intact tomatoes. Remove the stem and any other debris. Wash them thoroughly several times under running water, then lay them on a cloth side by side and let them air dry for a whole night or pat them very well with absorbent paper.
Arrange the cherry tomatoes in a single layer, well spaced, on a baking sheet/tray; place in the freezer until they are hard, it will take about 2-4 hours. This way, they won’t stick to each other.
Transfer them into freezer bags, remove as much air as possible, or in hermetic containers for freezer, close and label. Do not overload the freezer.
When you want to use them, use them directly from frozen. DO NOT THAW. So pour them directly into a pot or pan from frozen.
Storage and Tips
Cherry tomatoes can be frozen for 6-8 months. Remember, a frozen food should never be refrozen and consume it within 24 hours.

Does the taste or texture change?
The flavor remains quite similar, but the pulp becomes softer due to the ice crystals breaking the cells. You can use them perfectly for sauces and soups, but I don’t recommend them for salads.
Should I thaw them before cooking?
No. It is better to use them directly from frozen in the pan or pot. If you want to remove the skin, just pass them briefly under hot water.
