- 3 fennel bulbs
- 2 oranges
- 3.5 oz tofu
- 1.75 oz mixed seeds
- to taste extra virgin olive oil
- to taste fine salt

Steps for preparing fresh fennel salad
To prepare the delicious fresh fennel salad, start by removing the stalks and outer parts of the fennel and peeling the oranges. Then cut both in half and, with the help of a mandoline, slice the fennel thinly. Meanwhile, on a cutting board, cut the oranges into wedges.
Place in a serving dish, along with the mixed seeds, fine salt, and mix.
Lastly, cut the tofu or cheese of your choice into squares and add it to the salad.
Dress with good extra virgin olive oil and serve… enjoy your meal!
