Fresh Stuffed Zucchini

Fresh stuffed zucchini are a fresh and tasty side dish. They are served cold and not baked in the oven. In fact, the filling is raw.

Enriched with stracchino cheese and flavored with an anchovy fillet and chives, they are truly appetizing.

The zucchini used are the light ones, which are considered richer in nutrients and have less water than the dark ones. Moreover, they have a sweeter and more delicate flavor.

For a careful choice, I recommend feeling them before buying. If they are firm, it means they are fresh; otherwise, they are a few days old.

Ingredients for the preparation of fresh stuffed zucchini

  • 4 zucchini
  • 7 oz stracchino cheese
  • 2 fillets anchovy
  • 1 tsp chives
  • to taste salt
  • to taste extra virgin olive oil

Steps for the preparation of fresh stuffed zucchini

To prepare the fresh and tasty stuffed zucchini, start by washing them well under running water and trimming them.

  • Then in a pot insert plenty of water and bring to a boil. Once the water boils, add our zucchini and cook for at least 10 minutes from when the water starts boiling again. The cooking time may vary based on their size.

    Meanwhile, chop the chives and the two anchovy fillets with the chopper. Then, in a bowl, add the stracchino cheese and our chopped mix and stir until the ingredients are well combined.

  • Subsequently, drain the zucchini and with the help of a knife, first cut along the side of the zucchini and then, with a teaspoon, remove the inside.

  • When the zucchini are hollowed out, lightly salt them and then stuff them with our filling. Finally, give them a sprinkle of extra virgin olive oil.

  • Finally, our dish is ready to be served and enjoyed… bon appétit
