Gnocchi alla Romana

Roman-style gnocchi are a typical Roman recipe that has been passed down across the peninsula.

They are discs that are soft inside and crispy outside, made from a mixture of semolina, milk, eggs, Parmesan and butter, very tasty.

This is the basic recipe; in fact there are many variations, such as Roman-style gnocchi with sauce, green versions, and many other toppings.

It is a very simple recipe even for beginners; with my foolproof method for forming and cutting the discs you avoid wasting time and unnecessary waste.

Excellent served for lunch or dinner and they are so good that any occasion is right to serve them, to family or friends.

Ingredients

  • 1 1/2 cups semolina
  • 4 1/4 cups milk
  • 2 egg yolks
  • 3.5 tbsp butter
  • 1/2 cup grated Parmesan
  • to taste fine salt
  • to taste nutmeg
  • 1 cup grated Parmesan
  • 4 tbsp butter

Steps to prepare Roman-style gnocchi

To prepare the delicious Roman-style gnocchi, take a nonstick pot and pour in the milk, then bring it to a boil.

  • When the milk boils, turn off the heat and add the semolina in a thin stream; with a whisk by hand beat vigorously so that no lumps form. Then turn the heat back on, add the fine salt and cook, stirring constantly with a wooden spoon, for 10 minutes. The mixture will thicken.

  • When cooking is finished, transfer it to a bowl, quickly add the egg yolks, the butter, the nutmeg and the grated Parmesan. Mix well to combine all the ingredients and spread half of the mixture on one sheet of parchment paper and half on another, since it won’t all fit on a single sheet. Then roll each one tightly into a log and let cool completely.

    Once cooled, remove the parchment and cut the logs with a knife into discs about 5/8 inch thick.

  • Butter a baking dish and arrange the discs slightly overlapping, then sprinkle with the remaining grated Parmesan and dot with pieces of butter.

  • Bake in a preheated oven at 392 °F for 20 minutes, until golden. Once cooked, let them rest a few minutes and serve hot… enjoy!!

Storage and notes

Roman-style gnocchi can be frozen already cooked or kept in the refrigerator for two days. Always serve hot.
