Grandma’s all-apple cake without butter

Grandma’s all-apple cake is the cake my grandmother always made for breakfast.

Believe it or not, I used one kilogram of apples to make it… the result is incredible and you can see it in the photo. It looks like a mille-feuille thanks to the many very thin layers of apple used.

Hardly anyone dislikes this fruit, and in cakes it is certainly the most popular fruit thanks to its sweetness. When I make jam from any fruit, I usually add one or two apples to give it that extra touch of sweetness. I should note I use very little sugar in my jams.

Back to this cake: I used little yeast (leavening) and little flour. The batter remains quite runny and, once baked, becomes really soft.

If you love this fruit, I also recommend the apple tart, with a delicious and delicate puree inside.

Apples are precious for our bodies because they are rich in vitamins, lower cholesterol, help prevent diabetes, are rich in minerals, contain antioxidants, and much more.

Now let’s see together the steps to prepare it.-

Ingredients

  • 2.2 lb Golden apples
  • 2 eggs
  • 1/3 cup unrefined cane sugar
  • 3/4 cup type 1 flour
  • 1/4 cup sunflower oil
  • 1/3 cup plant-based milk
  • 1/2 packet baking powder
  • to taste ground cinnamon

Tools

  • 1 Bowl
  • 1 Mandoline
  • 1 Electric hand mixer
  • 1 Baking pan
  • 1 Silicone pastry mat

Steps to prepare the apple cake

Start by preparing a bowl in which you will first combine the eggs and then the sugar: whisk the two ingredients together with the electric mixer. Then add, in a thin stream, first the sunflower oil and then the plant-based milk, continuing to whisk with the electric mixer.

Next, add the flour and the baking powder and finish mixing everything together.

Once you have a nice airy batter, grease a round tart/baking pan and flour it to prevent the cake from sticking. Alternatively, line it with parchment paper.

Meanwhile, peel and slice the apples into very thin slices using the mandoline. They should be paper-thin.

Finish by adding the apple slices on top of the batter, really letting them sink in without worrying about the shape they take. You will see many layers form and it will look like a mille-feuille. Sprinkle some granulated sugar on the surface of the apples.

To finish, bake at 356°F (conventional/static oven) for 30 minutes. In the last 10 minutes move the pan to the upper rack of the oven so the apples brown. In air fryer mode bake at 320°F for 35-40 minutes. Before removing from the oven perform the toothpick test.

Once ready, let it cool and dive into its deliciousness.

Storage and notes

The apple cake keeps for two days at room temperature.
