Start by seasoning the tomato sauce with extra virgin olive oil, fine salt, and oregano.
Take a large bowl and fill it with fresh water. Slightly moisten the sheets of pane carasau, just enough to soften them without making them soggy. This is to make them malleable and prevent them from breaking in the pan.
Line a 20 cm round pan with parchment paper or lightly grease it with a little oil. Arrange three sheets of pane carasau slightly overlapping each other to cover the entire surface. Dress with tomato sauce and repeat in this way for another 2 layers.
In the last layer, add the mozzarella and bake in a static oven at 375-390°F for 15-20 minutes, until the mozzarella is melted and the edges become golden.
