Jam puff pastries are a classic example of Italian pastry that embodies the simplicity and goodness of traditional desserts. These are small rectangles of puff pastry filled with jam, which are baked until crispy and golden. The combination of the light and flaky pastry with the sweetness of the jam creates a contrasting texture and flavor that is irresistible.

Puff pastry, the base element of this recipe, is a versatile and layered dough known for its lightness and ability to puff up during baking, forming multiple crispy layers.

The jam filling offers a touch of sweetness and can be customized to personal taste. The most common jams used for puff pastries include apricot, raspberry, and strawberry, but any type of jam, preserve, or even chocolate cream can be used to vary the flavor. The quality of the jam is important, as a good quality product will enhance the taste of the final dessert.

The pastries are brushed with a light layer of beaten egg before baking, which gives them a shiny and golden finish. This step not only enhances the aesthetic appearance but also helps create a crispy and flavorful crust.

These treats are appreciated for their versatility. They can be served as a sweet breakfast, an accompaniment to afternoon tea, or as dessert after a meal. Sprinkled with powdered sugar, they become even more attractive and appetizing.

Steps for making jam puff pastries

To make the delicious jam puff pastries, start by rolling out the rectangular puff pastry with its parchment paper and wash the fruit thoroughly under running water or in a bowl with some baking soda. Then dry it with paper towels and set aside.

  • Meanwhile, divide the pastry into 6 equal rectangles and place them on a baking tray lined with parchment paper.

With a knife, score the edges creating a half-centimeter frame. Use a sharp knife or pastry wheel to get clean cuts. Then overlap the two opposite sides as shown in the photo.

  • Prick the surface with a fork. Beat the egg yolk in a cup and brush the edges with a kitchen brush and bake at 350°F for about 20 minutes or until the puff pastries have a nice color and have risen.

  • Once the baking is finished, let them cool and fill each with a generous tablespoon of apricot jam and decorate each with a sliced strawberry and two blueberries. Dust with powdered sugar and… serve…

Tips and Notes

If you buy puff pastry, opt for a high-quality product.

Choose artisanal or homemade jam, as they have a richer flavor compared to industrial ones and are much more genuine.

Use jams that are not too liquid to avoid them spilling out during baking.

Keep an eye on the pastries while baking. Every oven is different, so check often to avoid burning.
