- 1 3/4 cups type 1 flour
- 3/4 cup whipping cream

Steps for Last-minute Fritters
To prepare the Carnival fritters WATCH THE VIDEO RECIPE
Pour the flour into a large bowl.
Add the sweet cream, mixing with a fork and then with your hands.
Knead the dough for 4-5 minutes until you get a smooth and homogeneous dough, not too sticky.
If necessary, add a little flour to achieve the right consistency.
Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature
Divide the dough into 4 equal parts and pass each piece through the pasta machine starting from the thickest setting (0 or 1). Fold the dough on itself and pass it through 2 times.
Continue reducing the thickness gradually up to 5 or 6, depending on the machine.
The dough should be very thin: it’s the secret to crunchy fritters.
With a fluted pastry wheel, cut rectangles, make a central cut for the classic fritters shape.
Pour the peanut oil into a 26 cm pan and fry at 340°F
Fry a few fritters at a time, it takes 30–40 seconds per side
Drain them on absorbent paper.
Let cool and dust with plenty of powdered sugar and the Carnival fritters are ready to be served and enjoyed!
Storing Last-minute Fritters
Store last-minute fritters in a tin can or a rigid container, not in plastic bags that create moisture, in a cool, dry place for two to three days—NEVER in the fridge!
If after 1–2 days they lose crispiness: reheat in a static oven at 350°F for 3–4 minutes, they will regain their crispiness.
