- 14 oz cherry-sized mozzarella balls
- 0.5 oz pine nuts
- 4 sun-dried tomatoes in oil
- 5 leaves basil
- 4 tablespoons extra virgin olive oil
- 1 lemon
- 8 black olives
- 1 teaspoon dried oregano

Steps for preparing lemon marinated mozzarella balls
To prepare the lemon marinated mozzarella, start by preparing the emulsion. Squeeze a lemon with a citrus juicer and cut the sun-dried tomatoes into pieces; toast the pine nuts for a few minutes in a pan.
In a jar, pour the extra virgin olive oil, dried oregano, the juice of one lemon, the sun-dried tomatoes, and the basil leaves torn by hand. Cover and shake vigorously to create an emulsion. Alternatively, you can use a bowl and mix with a fork. Season with salt.
In a bowl, place the drained mozzarella bites using a colander and dress with the emulsion. Mix gently and add the olives. Cover with cling film and let marinate in the fridge for a few hours.
Serve at room temperature, after letting them rest a few minutes out of the fridge: in small bowls, on crostini, or as a shared appetizer.
