Meatballs are undoubtedly one of the most appreciated main courses. There are many ingredients you can pair with them, leaving room for creativity.
They are a classic of Italian cuisine and are a must on our tables, enjoyed by both adults and children.
These lemon-flavored ones are truly appetizing, plus they are simple to make and are cooked in a pan with the addition of a tasty sauce that gives them an extra touch.
In this recipe, I used minced veal, but you can easily replace it with mixed meat, which will be slightly fattier.

Ingredients for Preparing Lemon Meatballs
- 21 oz ground veal
- 7 oz boiled potatoes
- 1 egg
- 2/3 cup grated parmesan
- 5 oz cooked ham
- 1 tbsp chopped parsley
- as needed flour
- as needed fine salt
- 3 ladles vegetable broth
- 1 tbsp flour
- 1 lemon
- as needed salt

Steps
To prepare the delicious lemon meatballs, start by taking a bowl,
then add the boiled potatoes mashed with a potato masher, the ground meat, the egg, chopped parsley, the chopped cooked ham and finally the grated parmesan and salt.
Then mix everything well with a fork and take 50 grams of the mixture, rolling it with moist hands (to prevent sticking), to form round meatballs. Then in a serving plate add flour and coat each meatball.
Meanwhile, prepare the vegetable broth by adding sifted flour little by little while cold, stirring vigorously with a whisk to prevent lumps, and heat. This will yield a nice thick broth. In a non-stick frying pan, add extra virgin olive oil, enough to cover the pan surface, half a finger deep, no more. Heat the oil and then add the meatballs. Brown them, turning once per side, and then
Add the lemon juice and cook for two minutes.
Finally, pour in the vegetable broth and finish cooking on low heat with a lid for another 5 minutes. Once cooked, serve warm and … enjoy the taste! To mop up this delicious sauce, I suggest my soft bread.
Storage and Notes
Lemon meatballs can be stored in a closed container in the fridge for two days and can also be frozen
