In this recipe, it is quite brothy, but if you like it more concentrated, just add more lentils.

Ingredients for preparing lentil broth
- 1 1/2 water
- 1 medium potato
- 1 medium carrot
- 1/2 white onion
- 1 stalk celery
- 8.8 oz dried lentils
- to taste coarse salt
- to taste extra virgin olive oil

Steps for preparing lentil broth
To prepare the delicious and healthy lentil broth, we start by putting a high pot on the stove with water and bring it to a boil.
Meanwhile, clean the potato, carrot, onion, and celery by peeling them and washing under running water.
Cut them into coarse pieces on a cutting board using a knife, and as soon as the water boils, first salt with coarse salt, then add the vegetables.
Cook on low heat for half an hour with the lid on.
Afterward, remove the celery and with a mixer, blend all the vegetables immersed in the broth directly in the pot but with the heat off, please.
Then, pour in the lentils and cook, on low heat with the lid slightly lifted, for another half hour. We will notice the broth taking on a strong green color, the color of the lentils.
Once the time has passed, turn off the heat, add a drizzle of extra virgin olive oil, and serve.
If desired, grated cheese and croutons can be added.
Storage and notes
Lentil broth can be stored in the fridge in an airtight container for two days. Reheat before serving.
