Mediterranean spaghetti represent the perfect marriage between the simplicity of fresh ingredients and the richness of Mediterranean flavors.
A fragrant, colorful dish that wins over both the eyes and the palate.
The aroma of fresh basil blends with the slightly sharp scent of sautéed garlic, while extra virgin olive oil enhances the sweet, fruity smell of ripe cherry tomatoes. Stracciatella, with its milky and delicate note, completes everything, giving creaminess to the dish.
At first bite, the spaghetti reveal their perfect al dente cooking, offering a pleasant texture.
The stracciatella adds an enveloping creaminess that melds perfectly with the warm pasta, creating a contrast of textures that highlights the delicacy of the dish.
Each bite is enriched by the aromatic notes of fresh basil, which provide freshness and an unmistakable fragrance.
Taggiasca olives help accentuate the Mediterranean flavor of the dish.
Ideal to serve for a family lunch or with friends and relatives.

Steps for Mediterranean spaghetti
For a perfect preparation SEE THE VIDEO RECIPE
To prepare the delicious Mediterranean spaghetti, wash the cherry tomatoes under running water and cut them in half.
Peel the garlic cloves and lightly crush them with the flat side of a knife.
Wash the basil leaves and gently dry them with kitchen paper.
Bring a large pot of salted water to a boil.
Add the spaghetti and cook them al dente, following the package instructions.
In a large frying pan, heat the extra virgin olive oil over medium heat.
Add the crushed garlic cloves and sauté until they become golden, but not burned (about 2 minutes).
Remove the garlic from the pan and add the halved cherry tomatoes. Cook the tomatoes over medium-high heat for about 5–7 minutes, stirring occasionally, until they soften and release their juices.
Add a pinch of salt.
Drain the spaghetti using a colander when al dente, reserving one cup of the pasta cooking water.
Transfer the spaghetti to the pan with the tomatoes and mix well to combine everything. If necessary, add some of the reserved pasta water to create a creamier sauce and better bind the ingredients.
Finally, add the stracciatella, the olives, and the fresh basil.
Finish the dish with a drizzle of extra virgin olive oil and serve …
Enjoy! From Barbara.
Tips and storage for Mediterranean spaghetti
Choose well-ripened cherry tomatoes to obtain a sweeter, more flavorful sauce. If possible, buy vegetables at local Km 0 markets rather than wholesale. This allows you to have fresher produce. Freshness translates into higher quality, more intense flavors, and greater nutritional values.
You can add a pinch of dried chili during the garlic sauté for a touch of heat.
Mediterranean spaghetti keep in an airtight container for two days.
When reheating, you can warm them in a pan over medium heat with a little extra virgin olive oil or a splash of water to prevent them from drying out.
