Made with the same ingredients as an omelette, thus, eggs, vegetables, and grated Parmesan, but baked in the oven. Additionally, the zucchini acts as a shell for the chard, creating a unique, pleasant, and original appearance and texture.
The zucchini, sliced into rounds, are the main element and give the dish a soft texture and a sweet taste. The chard, which can include both leaves and stalks, adds a slightly fibrous texture that pleasantly contrasts with the tenderness of the zucchini.
Baking allows for a crispy crust to form. This crust, made even more flavorful with the addition of grated cheese, pleasantly contrasts with the soft and creamy heart of the casserole.
The final result is a versatile dish, which can be served as an appetizer, side dish, or main course. It is perfect to prepare in advance and serve hot or at room temperature, making it ideal for family lunches, dinners with friends, or buffets.

- 5 zucchini
- 1 1/2 kg Swiss chard
- 2 eggs
- 2.8 oz grated Parmesan
- to taste fine salt
- to taste extra virgin olive oil
- to taste breadcrumbs

To prepare Not Your Usual Omelette, start by thoroughly washing the vegetables.
Slice the zucchini into rounds that are not too thin, with a mandoline.
Next, bring a pot of abundant salted water to a boil and cook the chard for a few minutes. Once cooked, drain and let them cool. Then squeeze them to remove all the water.
Place them in a bowl, cut them into pieces, and add 2 eggs and part of the grated Parmesan. Mix everything and set aside.
Take a baking dish, grease it with extra virgin olive oil and a sprinkle of breadcrumbs.
Arrange the zucchini as shown in the VIDEO, salt, pour over the chard mixture, and cover with another layer of zucchini. Drizzle with extra virgin olive oil and the remaining grated Parmesan, and bake at 392°F for about
20-30 minutes, until the surface is golden.
