Ingredients for the olive crackers
- 1 1/4 cups all-purpose flour
- 3/4 cups cereal flour
- 1 oz Taggiasca olives (pitted)
- 2 3/4 tbsp extra virgin olive oil
- 5 oz water
- to taste salt

Steps
Let’s see how to prepare the crackers
Start by taking a bowl, where you will add first the flours, then the extra virgin olive oil, then the room temperature water, then the salt, and finally the coarsely chopped pitted olives using a knife.
Then knead until you get a compact dough, see photo.
Then, dust the entire surface with flour and using the rolling pin, create a rectangular sheet 0.08 inches thick.
Next, cut the sheet into rectangles of 2.4 inches x 2.8 inches. Then place them on a baking tray, previously covered with baking paper, and bake at 356 degrees Fahrenheit for about 20 minutes in a static oven.
