The organic whole wheat baked penne is a very tasty recipe made with genuine ingredients.

A first course with various textures, crunchy on the outside, soft and stringy inside, colorful and very appetizing.

Ideal to serve as a Sunday or holiday lunch but, for those who have time, it can easily be prepared during the week, and it is loved by both adults and children.

Prepared with the fantastic artisanal products from Marasca Agricola, a family-run farm in the Agro Pontino, which grows raw materials on their farmland with a respectful harvest of the times, like pasta and tomatoes. Meanwhile, the extra virgin olive oil is cultivated in abandoned olive groves, recovered and sanitized. It has a delicate flavor and invaluable quality.

All these ingredients make the dish truly unique as you can taste all the genuineness of the products.

And the addition of vegetables and stringy cheese gives it the final push to make it truly irresistible.

Ingredients for the preparation of baked whole wheat penne

  • 14 oz whole wheat penne Bio Marasca Agricola
  • 9 oz mozzarella for pizza
  • 2 zucchini
  • 2/3 cup grated Parmesan cheese
  • to taste fine salt
  • to taste extra virgin olive oil Marasca
  • to taste coarse salt
  • 1 package cherry tomatoes Marasca
  • 1/2 carrot
  • 1/2 fresh spring onion
  • 1 oz celery
  • to taste extra virgin olive oil Marasca
  • to taste fine salt

Steps for preparing the sauce

To prepare the sauce, clean the carrot, onion, and celery. Then chop them coarsely and blend them with a chopper.

In a small pot, pour a drizzle of the genuine extra virgin olive oil Marasca, heat it, add the chopped vegetables and let them sauté for a few minutes, then pour in the delicious cherry tomatoes Marasca. Cook for about fifteen minutes on low heat and salt.

  • To prepare the delicious organic whole wheat baked penne, start by cleaning the zucchini and slicing them very thinly with the mandoline or spiral, and set aside.

    Meanwhile, fill a large pot with plenty of water and bring to a boil. Add the coarse salt and toss in the organic whole wheat penne Bio Marasca Agricola and cook according to the times indicated on the package.

    In a separate bowl, grate the mozzarella for pizza with a grater.

  • After the sauce is cooked, pour some of it into an oven baking dish, as in the photo, add the whole wheat penne,

  • the remaining sauce, the zucchini,

  • the mozzarella, the grated Parmesan cheese, and the extra virgin olive oil. Mix everything well and bake at 392°F for about 15-20 minutes in a static oven. The cooking time obviously depends on the type of oven, so adjust accordingly if a few minutes more or less are needed,

  • until you achieve a perfect gratin that makes the penne crunchy on the surface and the mozzarella well melted. Then remove from the oven and serve hot and… enjoy your meal!

Storage and notes

The baked whole wheat penne can be stored in the fridge for two days. Before consuming, I recommend reheating in the oven at 320°F for about ten minutes.
