Orange prawns are a fragrant and tasty seafood dish. An original version of the classic white wine or lemon prawns, they look like a restaurant dish but are made in a few minutes.
They only require a few steps in the pan, quick cooking, and quality ingredients. The orange juice creates a natural, fragrant, and light sauce, making them more delicate and really appetizing.
They can be prepared in a few minutes, with few steps and ingredients, and are great to enjoy as an appetizer or main course for elegant dinners or holidays.
No cream or heavy sauces: just citrus and shellfish. Great if you want to eat well without feeling weighed down.
They are also fabulous as a pasta dressing.

Start by cleaning the prawns.
Remove the first two shells near the head.
Locate the dark line on the back. Gently insert a toothpick. Lift slowly until the intestine emerges.
Pull it out slowly without breaking it and remove it.
Rinse the prawns under running water and pat them dry with paper towels.
Grease a pan with extra virgin olive oil and brown the garlic cloves. Once browned, remove them and add the whole prawns, browning them 2 minutes per side.
The head will release juices that will add much more flavor to the dish.
Pour the orange juice and, if desired, season lightly with salt. I prefer them without salt.
Continue cooking for 3–4 minutes, turning the prawns once per side. Then remove from heat and add the knob of butter to the sauce, continuing to cook for a few more minutes, allowing the sauce to thicken and become denser.
Plate the prawns and season with the orange sauce and fresh parsley, serving hot. Decorate with thin slices of orange to make them more scenic.

Tips and Storage
Use sweet and untreated oranges, fresh or defrosted prawns of excellent quality, and choose prawns of similar size so they cook evenly
Fresh prawns should be stored in the refrigerator at 32–39°F, in a covered container or on a bed of ice.
It’s best to consume them within 1–2 days of purchase.
If you buy them frozen, defrost them in the refrigerator and not at room temperature
After cooking
Let them cool at room temperature
Store in an airtight container and keep in the fridge for up to 24 hours.
Do not freeze already cooked prawns: the texture and flavor would suffer.
