Ingredients
- 28 oz Abate pears
- 3 eggs
- 3 tablespoons whole cane sugar
- 0.5 cup type 1 flour
- 1.75 oz amaretti
- 1.5 tablespoons seed oil
- 0.4 cup oat milk
- 1 packet baking powder
- 2.8 oz 70% dark chocolate

Steps for preparing the pudding cake
To prepare the delicious pudding cake, we start by peeling the pears, cutting them in half, removing the seeds, and slicing them very thinly. Set aside. Separately, chop the amaretti and the dark chocolate using the handy Moulinex chopper
Then, in a bowl, add the eggs and the whole cane sugar and use a whisk to mix well
and add the sliced pears. Mix again and pour into a 20 cm springform pan lined with parchment paper and sprinkle the surface with the remaining chopped amaretti and chocolate.
Bake at 340°F (170°C) for 45-50 minutes. Remember the toothpick test is essential to check if it’s done. Once baked, let it cool slightly as it is also excellent warm. Enjoy your tasting!
Storage and notes
The pudding cake keeps for two days in a cool, dry place.
