Poached Avocado

This recipe was born because the combination of avocado and egg, besides having a great taste, is a boon for our health. Avocado is one of those fruits that should never be missing on tables. In addition to having numerous beneficial properties, it is very versatile in cooking, both for savory and sweet recipes.

It’s rich in monounsaturated fats, the so-called good fats, which are beneficial to good cholesterol. It’s rich in fiber, antioxidants, vitamins, and minerals.

With avocado, you can also prepare excellent masks for both the face and hair, as it is very oily, and in sweet recipes, it is used as a substitute for butter.

The yolk is rich in unsaturated fats, which significantly lower cholesterol levels and is rich in minerals and vitamins.

The avocado seed can easily be planted in a pot or directly in the ground with the addition of soil. Naturally, I did it; my plant is almost 4 years old but still not producing, as if not grafted, production times are around 8 years. So you have to wait a while, but then the results are remarkable; they are plants that produce a lot.

You can accompany this dish with the crackers.

Ingredients

  • 1 avocado
  • 2 egg yolks
  • 1/2 lemon
  • to taste salt
  • to taste extra virgin olive oil

Steps

To create poached avocado, cut the avocado in half with a knife and extract the pit, which we will set aside for anyone who, like me, wants to plant it.

Place the grill pan on the gas or electric stove and heat it. Once it’s hot enough, insert the 2 halves of the avocados and let them brown on low heat for about 6-8 minutes, exclusively on the cut side.

In the meantime, separate the yolk from the egg white and heat a small pan with a drizzle of oil. Once it reaches temperature, gently add the yolks without breaking them and cook them for at least 2 minutes, covering the pan with a lid and adding salt.

Once both are cooked, drizzle the two halves of the avocado with some lemon juice and add salt.

Place the yolks in the hole left by the seed and serve… enjoy your meal!

Notes and Tips

Poached avocados don’t keep for more than a few hours.
