The potato and mushroom baskets are a tasty and very flavorful dish to present as an appetizer or as an aperitif or at party buffets.
Made with a single-serving basket-shaped puff pastry base, with a tasty filling of potatoes and mushrooms first sautéed in a pan and enriched with cheese which gives the final push to the recipe. Everything is then baked in the oven.
In addition to being very appetizing, they are very pleasing to the eye and convenient to serve.

Ingredients for Preparing Potato and Mushroom Baskets
- 1 puff pastry
- 10.5 oz champignon mushrooms
- 2 medium potatoes
- 3.5 oz smoked scamorza cheese
- to taste fine salt
- to taste extra virgin olive oil
- to taste grated Parmesan cheese

Steps for Preparing Potato and Mushroom Baskets
To prepare the tasty potato and mushroom baskets, start by cleaning the potatoes and cutting the smoked scamorza cheese into small pieces.
After peeling the potatoes, use a mandolin to cut them into strips and then a knife into cubes.
Next, in a non-stick pan, add a drizzle of extra virgin olive oil and the champignon mushrooms already sliced. Let them release their water. Once the water has evaporated, add the potatoes and sauté for 6-7 minutes, then let cool.
In the meantime, roll out the puff pastry and with a ring moldd. 10 create circles to place into tart molds, creating edges as shown in the photo.
Then add salt and the chopped scamorza cheese to the sautéed potatoes and mushrooms. Mix well and generously fill the baskets. Sprinkle the surface with grated Parmesan and bake at 356°F (180°C) for about 30 minutes until golden brown.
Once baking is completed, take out and serve hot… enjoy!
Advice and Notes
The potato and mushroom baskets can be stored in the fridge for two days. Before serving, I recommend reheating them in the oven for a few minutes at 320°F (160°C).
