Potato and Mushroom Pie

The potato and mushroom pie can be defined as a tasty, stringy, flavorful, rich, and I would say complete dish. The combination of these two ingredients with the smoked cheese makes it very appetizing. Made with seasonal vegetables, baked nice and warm, it warms both the palate with pleasure and the body with heat.

I don’t know about you, but my first thought in the morning as soon as I wake up is, what do I cook today? And my children, accustomed to my dedication to cooking, remind me. Being a housewife, not by choice, I have time to dedicate to this passion, which also helps me keep my mind occupied. My social life, especially in winter, is not very active since I don’t have a job.

Mushrooms are rich in fiber, potassium, and copper, and they are excellent antioxidants like potatoes.

This recipe is easy and fairly quick to prepare. And if you like it, I also recommend the zucchini pie, the artichoke cake, and stuffed artichokes.

Ingredients

  • 1 puff pastry
  • 6 medium potatoes
  • 7 oz porcini mushrooms
  • 5 oz smoked cheese
  • to taste chopped parsley
  • to taste salt
  • to taste extra virgin olive oil
  • 1/4 cup wine

Steps for preparing the pie

Let’s start by peeling the potatoes with a potato peeler and slicing them fairly thin.

  • We grease a pan, bring the oil to temperature, and add them. Cook over low heat, taking care they don’t stick, then turn them regularly with a wooden spoon and cover.

    At a quarter of cooking, add half a cup of wine and, at halfway, add the porcini mushrooms which can be fresh or frozen. Leave them slightly firm and let them cool.

    Then line a parchment paper in a 35 cm round baking tray and roll out the puff pastry.

    Next, add diced smoked cheese and chopped parsley to the potatoes and mushrooms and mix.

    Finally, pour everything into the pastry. Gently adjust the edges with a fork, folding them inward.

    Bake at 356 degrees Fahrenheit for about 30 minutes and serve hot … enjoy
