Puff pastry baskets are easy and quick to make. They have a crispy and light texture and can be filled with any ingredient of your choice, making the dish truly unique.
Ideal to serve with rice salads, creams, couscous, Russian salad etc.
They add an extra touch to our dishes, both for their deliciousness and originality. As the saying goes, we eat with our eyes too.
I prepared them with fantastic type 1 artisan stone-ground flour from Italian wheat, directly from Lombardy. This flour retains all its nutritional value as it is less refined than type 00. You can find it in the shop of Dispensa della Casalinga.

Ingredients for the preparation of puff pastry baskets
- 1 1/4 cups type 1 flour
- 1 tbsp extra virgin olive oil
- 1 tsp salt
- 1/3 cup water

- 1 Rolling Pin
- 10 Molds
Steps for preparing the puff pastry baskets
To prepare the puff pastry baskets, start by taking a bowl.
Then add in the flour, followed by the extra virgin olive oil, then the water, and finally the salt. Use a wooden spoon to roughly mix the ingredients and then transfer them onto the pastry board. Begin kneading vigorously by hand for a few minutes until you obtain a compact and smooth dough.
At this point, flour it well and use the rolling pin to create a rectangular and thin sheet.
Then, with the help of a round mold with a diameter of about 5 inches, create circles. The remaining dough scraps can be kneaded again to make a new sheet, continuing to make more circles. Afterwards, take a muffin mold that is not very tall, or better yet, a tart mold, and flour it well. Finally, place the circles inside, making sure they overhang evenly to create the baskets. Finish by pricking the bottom of the baskets with a fork to prevent bubbles from forming during baking. Bake in a static oven at 355°F for about 15 minutes or in an air fryer at 355°F for about 8 minutes.
Once the baking is done, let them cool and fill as desired. Then I can finally say … enjoy your tasting!
Storage and Notes
Puff pastry baskets keep for two days in a cool, dry place. If you have leftover dough, I recommend making tasty breadsticks.
