One of the most indulgent and versatile preparations remains these rolls of asparagus, puff pastry, speck and cheese.
These asparagus rolls are perfect as an appetizer, aperitif or even for brunch: just wrap blanched asparagus in some speck, enclose them in strips of puff pastry together with a melty cheese such as scamorza or provola.
Once brushed with egg and baked, they become golden, crunchy on the outside and soft inside, with a perfect balance between the strong flavor of speck, the creaminess of the cheese and the freshness of the asparagus.

- 24 asparagus
- 8 slices speck
- 8 slices scamorza (or provola)
- 1 rectangular puff pastry sheet
- 1 egg yolk
- to taste sesame seeds

Steps for the puff pastry rolls with asparagus
To prepare the puff pastry rolls with asparagus, speck and cheese WATCH THE VIDEO RECIPE.
Start by removing the toughest part of the asparagus; if you bend them they will snap at the exact point. Rinse them under running water to remove any impurities.
Cook them in a pot with plenty of salted water for 8-10 minutes until they become tender. Time may vary depending on the size of the vegetable. When cooked, drain them with a colander and, if you want to preserve their bright green color, immerse them in ice water.
Meanwhile, roll out the rectangular puff pastry and cut 8 equal rectangles.
On each strip place a slice of cheese (scamorza or provola), a slice of speck and three asparagus. Fold and seal the puff pastry with the tines of a fork.
Beat an egg in a small bowl and brush the surface of the rolls to make them golden and glossy during baking. Sprinkle with sesame seeds and bake in the oven at 356°F for about 20-25 minutes until golden.
Storage for the asparagus puff pastry rolls
The puff pastry rolls with asparagus, speck and cheese keep well both in the refrigerator and in the freezer, provided a few precautions are followed: once cooked, it is important to let them cool completely before placing them in an airtight container or well covered with plastic wrap, to avoid condensation that would make the pastry soggy.
In the refrigerator they keep for about 2-3 days and, when serving, it is recommended to reheat them in a conventional oven at 320-356°F for 8-10 minutes to restore their crispness (better to avoid the microwave, which would make them soft).
If, instead, you want to keep them longer, you can freeze them either raw, already assembled, or cooked: in the first case you can bake them directly from frozen, adding a few extra minutes to the cooking time, while if they are already cooked it is better to thaw them in the refrigerator and then pass them through the oven to bring back crunchiness, thus preserving flavor and texture as best as possible.
