Pumpkin cutlets are the perfect choice if you’re looking for a light and tasty dish.

Preparing a pumpkin cutlet is really easy and quick. Simply bread it in egg and breadcrumbs and cook it. You can achieve a crispy pumpkin in an air fryer, golden on the outside and soft on the inside using little oil.

If you don’t have an air fryer, you can try the baked pumpkin cutlets as a valid alternative.

Breaded pumpkin is an original idea to get children to eat vegetables.

Pumpkin cutlets are very versatile; you can serve them hot or warm and pair them with light sauces, such as vegan mayonnaise or egg white mayonnaise homemade.

Ingredients for preparing pumpkin cutlets

  • 2 eggs
  • 1.3 lbs pumpkin
  • to taste bread crumbs
  • 1 sprig rosemary
  • to taste fine salt
  • to taste extra virgin olive oil

Tools

  • 1 Cutting board
  • 2 Plates
  • 1 Fork
  • 1 Air fryer
  • 1 Oil sprayer

Steps for preparing pumpkin cutlets

To prepare the delicious pumpkin cutlets, start by washing the vegetable under running water.

  • On a cutting board, slice it into round pieces about 1 inch thick. I used butternut squash, but trombone squash is also fine.

    Leave the skin on as it is rich in nutrients.

  • In a deep plate, beat the eggs with the salt and coat the pumpkin slices on both sides

  • In another plate, pour the breadcrumbs and coat. Repeat the process 2 times for a crunchier breading.

  • Place in the basket of the air fryer or on a baking tray, and season with a spray of extra virgin olive oil, using an sprayer, and some freshly chopped rosemary.
    Cook in the air fryer at 375°F for about 10-12 minutes, turning halfway through or until lightly golden. They should be golden and crispy.

  • Or in a static oven at 400°F for 15-18 minutes, turning them halfway through.

Storage

Once cooked and cooled, store them in an airtight container for up to 2 days.

To restore crispiness, heat them in the oven or air fryer at 350°F for 5 minutes.

Freezing is not recommended.

    Yes, you can bread them and store them raw in the fridge for 12–24 hours well-covered. When it’s time to cook them, they will be fresh and crispy.
