Cauliflower balls recipe

  • 8.8 oz purple cauliflower
  • 7.1 oz potatoes
  • 1 egg
  • 1 oz grated parmesan
  • as needed string cheese
  • as needed fine salt
  • 1 spray extra virgin olive oil

Steps for Purple Cauliflower and Potato Balls in Air Fryer

To prepare the delicious purple cauliflower and potato balls, start by peeling the potatoes with a potato peeler. Wash under running water and cut into cubes. Slice the purple cauliflower into florets and also wash under running water.

  • Cook the potatoes in a pot with steamer basket for 3-4 minutes from boiling, then add the purple cauliflower and cook for another 7 minutes or so.

  • They should be tender but not mushy. Place in a bowl and let cool

  • Mash the potatoes with a potato masher and finely chop the purple cauliflower on a cutting board.

  • Mix the two ingredients and add the egg, parmesan, and fine salt.

  • Stir well until you obtain a homogeneous dough compact enough to work with hands.

  • Divide the dough into equal portions. Take each portion, flatten it slightly on your hand, put the string cheese in the center, I used julienned Galbanino but you can use the cheese you prefer, then close the dough around the cheese forming a round ball.

  • Place the balls in the basket of the air fryer. Season with a light spray of oil using the oil sprayer and cook in an air fryer at 356 degrees for about 15 minutes, turning them halfway through.
    Check the last minutes of cooking as each fryer cooks slightly differently. They should be golden.
