It’s prepared in just a few minutes, without butter, with little flour and lots of apples.

The result is a very soft apple cake, fragrant and perfectly moist, thanks to the yogurt that makes it soft inside and golden outside.

Ideal for a wholesome breakfast or snack.

This soft apple and yogurt cake was made one Sunday morning. I had a crazy craving for something sweet but little time available. Obviously, we always have apples at home, so it came naturally to make it.

Ingredients for the Quick Apple Cake

  • 5 apples
  • 2 eggs
  • 2/3 cup all-purpose flour
  • 1/2 cup yogurt
  • 1/3 cup erythritol or sugar
  • 2 1/2 tbsp vegetable oil
  • 1/2 packet baking powder
  • 1 lemon
  • 1 pinch fine salt
  • to taste almond flakes
  • to taste powdered sugar

Steps for the Quick Apple Cake

To prepare the soft apple cake recipe, start by peeling the apples with a peeler or a knife

  • Remove the core, cut in half and remove the seeds

  • Cut into small cubes. Place them in a bowl along with the juice of one lemon. This will prevent them from browning.

  • In another bowl, crack the eggs and add the sugar and a pinch of fine salt

  • Beat with the electric beaters until you get a frothy mixture

  • Add the grated zest of one lemon, and while keeping the electric beaters active, add the yogurt, vegetable oil, flour, and baking powder.

  • Finally, add the diced apples

  • Line a baking pan, I used a 20×20 pan, with parchment paper, and pour the batter

  • Decorate with almond flakes and bake in a static oven at 356°F for about 35-40 minutes. Do the toothpick test before taking it out

  • Cook in the air fryer at 320°F for about 35 minutes. Each air fryer has slightly different cooking times, so check in the last few minutes, always doing the toothpick test

Advice and Storage

The very quick apple cake in 10 minutes keeps at room temperature for 2-3 days if it’s not excessively hot, under a glass dome or covered with plastic wrap. Otherwise, store it in the fridge

It can be frozen cut into pieces and stored individually. Once defrosted, just heat it for a few seconds in the microwave or in the air fryer at 284°F for 3-4 minutes.
