- 9 sheets carasau bread
- 3 zucchini
- 7 oz stracchino
- 1.5 oz grated Parmigiano-Reggiano
- 2 tablespoons extra virgin olive oil
- to taste fine salt
- 1/2 onion

Steps for the carasau bread tart

Wash the zucchini under running water, remove the ends, and slice them into rounds with a mandoline. Chop half an onion with a chopper. Brush a pan with a drizzle of oil and sauté the onion, then add the zucchini, season with salt, and cook for 5-6 minutes until tender but not falling apart.
Fill a large bowl with water and moisten the carasau bread sheets so they become flexible, not soggy. Line a Ø 7 7/8 in pan with parchment paper and arrange 3 slightly overlapping sheets of carasau bread to cover the surface. Stuff with the zucchini, stracchino, and grated parmigiano.
Cover with another three moistened sheets of carasau bread and drizzle with a little extra virgin olive oil. Bake in a conventional oven at 356°F for 20-25 minutes, until golden. In air fryer mode at 338°F for 18-20 minutes.
When baking is complete, let the tart rest for 5 minutes out of the oven.
Serve warm: the flavors will be more balanced and the texture perfect.
Storage
You can store the carasau bread tart with zucchini and stracchino wrapped in plastic wrap or in an airtight container in the refrigerator for 2 days. Before eating, reheat it at 320°F for a few minutes in the oven. I do not recommend freezing because stracchino changes texture and carasau bread becomes chewy.
