- 1 1/2 qt water
- 2 packages quinoa soup
- 1/2 package ancient grain
- to taste extra virgin olive oil
- to taste fine salt
- 1 carrot
- 1 potato
- 1 onion
- 1 stalk celery

Steps for preparing quinoa soup
To prepare the delicious quinoa soup, start by preparing the vegetable broth. So in a pot add the water and bring it to a boil. In the meantime, clean the vegetables and cut them into large pieces and add them to the water once it boils along with the salt.
Then cook over low heat for at least 40 minutes. After the time has passed, blend everything with an immersion blender and add the quinoa soup with Sicilian beans and the ancient wheat, mix, season with extra virgin olive oil, and serve… enjoy your meal!
Storage and Notes
The quinoa and wheat soup can be stored in the fridge for two, up to three days. Before serving, heat it and serve hot.
