Ingredients for Saffron Mashed Potatoes
- 2.2 lbs potatoes
- 1 cup milk
- 0.3 g saffron powder
- 3.5 tbsp butter
- to taste fine salt
- to taste pistachio crumbs

Steps for Making Saffron Mashed Potatoes
To make the delicious saffron mashed potatoes, start by peeling the potatoes and cutting them into pieces. Meanwhile, bring a steam pot to a boil (or if you don’t have one, you can cook them in a regular pot but with the skin on and remove it once cooked) and add the potatoes, cooking for 15-20 minutes. Perform the skewer test to check for doneness.
Meanwhile, in a small saucepan, pour the milk and saffron, and heat without boiling, stirring occasionally with a wooden spoon. Once hot, add the salt and butter.
After the potatoes are cooked, mash them with a potato masher into a bowl
and gradually add the saffron milk, mixing vigorously with a whisk until you have a smooth and creamy mixture.
Plate and garnish with pistachio crumbs, and serve hot… enjoy!
Conservation and Notes
Saffron mashed potatoes can be stored in the fridge for two days. Before serving, reheat in a saucepan with the addition of milk until the desired creaminess is achieved.
